Peanut Butter Chicken, Roasted Bok Choy, and Jasmine Rice
Ingredients
2 chicken thighs
2 heaping tablespoons of crunchy peanut butter (any brand)
2 Dorot Ginger Cubes
1 Dorot Garlic Cube
1 tablespoon of honey
2 tablespoons of soy sauce
4 small Bok Choy
Pam Olive Oil Cooking Spray
1 Package Trader Joe’s Organic Jasmine Rice (makes one cup of rice)
Salt and pepper to taste
- Preheat the oven to 350 degrees Fahrenheit
- Combine the peanut butter, ginger cubes, garlic cube, honey, and soy sauce into a large bowl. Add in the chicken thighs and set aside to marinate.
- Wash the Boy Choy and dry them off. Then slice them in half the long way. Place them on a baking sheet, spray them with the Pam olive oil spray and lightly season them with salt and pepper.
- Once the oven is preheated, put the marinated chicken on a baking sheet and cook for 15 minutes. Add the bok choy next to the chicken in the oven and cook both for an additional 15 minutes.
- Once the chicken and boy chop are cooked, you can start to plate them as you microwave the rice.
